Underscore is fine. Here's the regexp that bibtex.el uses for keys:
\\([][[:alnum:].:;?!`'/*@+|()<>&_^$-]+\\)
See bibtex-entry-head.
Jabref is pretty solid (though I'm not at fan of how handles encoding) and
will not produce wrong keys.
