is possible to use a cell reference to a table
or spreadsheet as a property value?

Example:

***** lunch
      :PROPERTIES:
      :CASH: #lunchtable:@>$2
      :END:

      #+NAME: lunchtable

      |------------------+---------+
      | [2014-02-10 lun] |   16.00 |
      | [2014-02-07 vie] |   27.00 |

... and align numbers in the columns view?

No, this is not possible.

I'm not sure I understand -- you want numbers to be aligned
on the left instead of the right in the column view?

default is left-aligned, I want to right align the numbers.

my properties por columns:

#+COLUMNS: %46ITEM(Descripción) %10COST(Estimado){$}
%10CASH(Real){$}

+Numbers are right-aligned when a format specifier with an explicit width like
+@{%5d} or @code{%5.1f} is used.
