I'm not entirely sure either, I pretty much just blindly followed the instructions on the FAQ. I don't think this is at all the minimum you need to get xelatex working, it also sets up a few other things. For instance it used latexmk instead of just recompiling a few times. Perhaps the FAQ should be split up into a few different questions:

For beamer export I add this line:

So far I have not encountered any problems. Although I have to say, I
do not use unicode in mathmode.
I am curious to know why others need all this elaborate setup to use
XeLaTeX.
