My trend has been moving from GUI to the benefit that text based solutions provide: reproducibility, version control, and documentation. In my case, email is much easier to extract into my task management system than most IM type solutions. IM is good for short conversations, but really has a problem with organizing more historic data that may be needed for much tougher topics that cannot be answered in a single session. Slack threads really drive me crazy, because I have a hard time finding them again after a day or so. This is where I use DEVONthink to associate different forms of data into the related projects and use DEVONthink links in org mode for my notes and task management.
