Ive seen more problem-causing characters like dashes of different
lengths and maybe some others

For the OP, in particular, gnus will has the functionality to fix up a
number of these characters in article-treat-dumbquotes which uses a
character map (gnus-article-dumbquotes-map) defined in gnus-art.el.
