I found some time today to explore and have managed to answer my own
question.  Unsurprisingly, org has what I need!

Using the answer given to a related question on StackExchange [1], I
came up with this simple function:

    (when (and value (not (string=3D value ""))
               (or (string=3D column-title "SCHEDULED")
                   (string=3D column-title "DEADLINE")))

  (setq-local org-columns-modify-value-for-display-function
              #'esf/todo-column-display-filter)

Makes my column view much easier to read for seeing my todo list!
