If i have a list like:

** [/] Headin
   - [ ] one
   - [ ] two

I can add a new line with a checkbox with the command M-S-<RET>. The [/] is updated immediately. Is there a smarter way to remove items from the list, than C-k, C-c #?

I like to have a [0/0] when removing the last item. Is this possible?

No.

No. FWIW I think [/] is better than [0/0] in this case... if only
for mathematical reasons :)
