You can bind the function to org-export-filter-plain-text-functions
instead of ...-final-output-functions.
That way you wouldn't get false positives on lines like:
=email:oub@mat.ucm.es= some text @some text@
<code>email:oub@mat.ucm.es</code> some text <span style="color:red">some text</span>
