When I add my beamer entry (see below), I do not escape the curly
braces:
#+begin_src emacs-lisp
(add-to-list 'org-latex-classes
'("beamer" "\\documentclass{beamer}
\[DEFAULT-PACKAGES]
\[PACKAGES]
\[EXTRA]"
("\\section{%s}" . "\\section*{%s}")
("\\subsection{%s}" . "\\subsection*{%s}")
("\\subsubsection{%s}" . "\\subsubsection*{%s}")
("\\paragraph{%s}" . "\\paragraph*{%s}")
("\\subparagraph{%s}" . "\\subparagraph*{%s}")))
#+end_src
I have no idea whether that makes a difference or not but have you
looked to see what org-latex-classes is actually set to after your
customisation?
