You can use drawers:
* Some section
:HANDOUT:
...
:END:
:BOOK:
...
:END:
Then, you can play with `org-export-with-drawers' and its OPTIONS
counterpart:
#+OPTIONS: d:("BOOK")
for a book-only export.
#+OPTIONS: d:(not "HANDOUT")
for an everything-but-handout export...
