I believe this is the result of `org-fontify-done-headline', which
defaults to t as of e360cd8f3a from Feb 2020.

It is, thanks!
I don't think it is a good default, by the way. It disrupts the visual
readability of the document structure, which is more important than
further emphasizing the DONE state.
