I halso have no org-block-background in my setup: C-h v org-block-<TAB>!

Are faces supposed to show as variable?

in my setup, this is defined in org-faces.

Maybe you can do something as mundane as

(set-face-background 'org-block-background "plum2")

in your init file.

Maybe
