try something like this:

#+NAME: foo
#+BEGIN_SRC emacs-lisp
  (defun foo (x) (+ x 2))
#+END_SRC

#+results: foo
: foo

#+BEGIN_SRC emacs-lisp  :var fun=foo
  (funcall (intern fun) 3)
#+END_SRC

#+results:
