It is enough to put it in a group:

  ┌────
  │ \bgroup
  │ \lstset{...}
  │ \begin{lstlisting}
  │ ...
  │ \end{lstlisting}
  │ \egroup
  └────

Otherwise, all the options specified by `\lstset` can be applied as an
option of the `lstlisting` environment:

  ┌────
  │ \begin{lstlisting}[language=⟨language⟩,...]
  └────
