OK, try to eval these:
(let ((params '(:sep "|")))
(org-combine-plists
'(:sep "," :fmt org-quote-csv-field)
params))
(let ((params '(:sep "|")))
(org-combine-plists
params
'(:sep "," :fmt org-quote-csv-field)))
The latter prevents :sep from being overriden.
