How about
emacsclient -ca "" --eval "(org-mode)"
or just your index.org file:
emacsclient -ca "" ~/index.org
In Gnome or other fancy DE you'd just create a .desktop file to make an
entry in your launcher. I don't know how one does something similar in
Macs.
