So, I am not sure what it is you want to do but maybe a line along the lines of #+latex_header: \setlength{\parindent}{0pt}\setlength{\parskip}{6pt} might give you "unbunched" "unindented" paragraphs. A table of contents will probably only be generated if you have not turned of heading numbering.
