You cannot do this right now.

See these variables:

org-export-latex-timestamp-markup:
  "A printf format string to be applied to time stamps."

org-export-latex-timestamp-inactive-markup:
  "A printf format string to be applied to inactive time stamps."

org-export-latex-timestamp-keyword-markup:
  "A printf format string to be applied to time stamps."
