I just realized that there is a much simpler solution for your katex
environment :-)

You can use an example block, and define your custom environment using
the attribute :environment

#+ATTR_LaTeX: :environment katex
#+begin_example
E = -J \sum_{i=1}^N s_i s_{i+1}
#+end_example
