Just wanting to add a variant:

1bis. teach Emacs that .txt means Org-mode:

#+begin_src emacs-lisp
      (setq auto-mode-alist
            (append '(
                      ("\\.txt$" . org-mode)
                      ) auto-mode-alist))
#+end_src
