If I understood well, I think that the difference between C-c . and C-c ! is that the timestamp is active or not. is an active date that appear in agenda view. So you have ti use it if you want to see the task scheduled or deadlined. [DATE] format does not allow the timestamp to interact with agenda view. It is used to indicate date just for information.
