Just for the historical records. At the end I managed to solve this
problem by just adding the following lines:

(add-hook 'message-mode-hook 'orgstruct++-mode 'append)
(add-hook 'mail-mode-hook 'orgstruct++-mode 'append)
(add-hook 'message-mode-hook 'orgtbl-mode 'append)
(add-hook 'mail-mode-hook 'orgtbl-mode 'append)
