AFAIK, git is available on the Mac under OSX, but I have no idea where to get it: somebody on OSX will have to point you to it. After you get git installed, read this section of the Org website: http://orgmode.org/index.html#sec-3_2 and follow the pointer to the "Keeping current" section of the FAQ. git does tend to blow your mind the first few times you use it (it shares that characteristic with org-mode, except that the latter keeps coming up with new ways to blow your mind - git is pretty static by comparison): don't be discouraged. OTOH, you don't really need to understand much about git to keep current with org development: a couple of commands is enough. You'll need to know a bit more in order e.g. to experiment with Nicolas Goaziou's list reimplementation since that is not in the upstream master (yet). OTOOH, if you'd like to dig deeper, there are various git tutorials on the web: try the git website (http://git.scm.org) and the Wikipedia page on git. In addition, Scott Chacon's book "ProGit" is available in both online and dead-tree versions - I've only read a couple of chapters but it looks pretty good.
